New user here.  Every video I watched, or breakdown shows the person connecting their iPhone to their controller via USB cable.  I do not have a USB connection other than micro usb on my controller which my iPhone cannot connect to.  So do I need this or not?  All this information is so confusing as there appears no consistency.

Which phantom do you have?  If it's the 3 standard or 4k. You hook up to the remote via wifi. If it's the advanced or pro use your lightning cable to hook to the remote.

I have the Phantom 3 Professional 4K.  

Perhaps you haven't found the manual for your drone.  
Go to www.dji.com and they are all there in Downloads for each model

I am going based on the DJI Go App which tells me to set it up to connect the wire.  Which I cannot do.

From what you are saying, I suspect you have a Phantom 3 4K, not Phantom 3 Professional 4K. In which case you may not have downloaded the correct manual, get the one for the 4K, not the Pro. The reason you do not have a USB connection is because the device connects to the RC unit via a WiFi connection, not a cable. If you are looking at tutorials on how to connect, again you should be looking for the one describing the 4K, not the Professional model.

Read the manual. You have a Phantom 3 4K. Not a Professional. The 4K and the Standard have only the micro usb port on the Remote.
