Was looking through my flight log and I saw that my P3S had a top speed of 55.1mph. How is this possible?

It's probably not true at all.
There is a well known bug in the Go app that gives inaccurate records for Top Speed.
Similarly Top Altitude may also be incorrect.
Go through your individual flights and you won't be able to find any where you have achieved 55 mph.

It is possible to do 55 mph but only by hitching a ride on a very strong tailwind in atti mode.
And if you'd done that, you would probably remember the flight .... and the difficulty you had getting home again.

True, I have only flown in ATTI mode once and was afraid..never again

Atti mode if fine but having no experience and being afraid of it could be a problem if you ever have to fly in atti mode.
It's a bit like driving on ice with no brakes.
Go to a big open area where there's nothing to hit and give it a go, slowly at first to get the hang of it.
