I haven't used the camera settings histogram feature before, but in playing with it, it looks like it would be very useful in the field getting the right exposure.

My question is on the graph peaks - what is the general rule on where the histogram peaks should be (center, left, right, keep away from the edges)?  It appeared to me that I would get a better exposure when the peaks are over towards the left, but I need to ask the question to those who have used it a lot.

That's not exactly true, you're probably referring to the bell shape which stretches left to right with the high part being in the middle, that is as a general guide fine.  A bunched histogram in the middle however wouldn't have much of a tonal range and low contrast. Ultimately it's knowing what to expect in certain situations or what you are trying to achieve.
