I've held a commercial pilot ticket since the 1960's
(Yes, I'm old enough to have killed the last dinosaur)

I also fly an Inspire-1 now....and love it.

I have changed the stick controls on my Inspire-1 to reflect my muscle and mind memory to what I experience when I really fly.

Why has the RC world adopted the opposite ascend and descent controls than traditional aviation?

(I'm just curious - not criticizing)

The stick usually controls throttle in the RC world, and not ascending/descending. Dji changed it to make it easier for people who don't know to fly. Because of that it makes sense that when you throttle up it goes up.

As a Dino myself i only know it that way. Even my selfbuild hell from the 1970 and an old Remote is programed that way.
It was Logic than and new to me, trottle up is up.  Dji did not invent it.
