I just did a 24x36 print of the portrait one which I will be putting on acrylic. Will post pics of the results. I did a smaller 11x14 version with epoxy and it came out great! The bigger one will look even nicer!

You can use the litchi app for automatic photo shooting, but I personally like to do it manually. Like that I can see how the pics are coming out and if there are any blurry ones I can retake them right on the spot. Then you put them together in Lightroom, Photoshop or your phone.

The portrait one was done with 3 photos, as for the other two, the night pano took about 30 shots and the day pano (which is a 360) took about 60 shots. Very high quality pics can be achieved by stitching photos together.

I always shoot raw. I can't recall the settings I used for that pano. I never pay too much attention or try to remember the settings I use for a photo or video. I play around with the settings until I get something Im happy with, and since the photos are raw I have a wide range of adjustment thats why I dont worry about settings too much.
Most of the time I start with the ISO set to 100 and start decreasing shutter speed to get the right exposure. If I have to do more a 1 second on the shutter then I start increasing the ISO. The reason I do it that way is to find the best setting that allows me to get the best exposure using the lowest amount of ISO and the shortest shutter speed. This way I will end up with a clean photo with low noise. If the night is calm (no wind) you can get way with going all the way up to 2-3 second exposure.

Correct. You do not want to limit the amount of light coming in to the sensor at night since there's barely any to begin with
