Reading the documentation on this I cant understand what it does!? What is the difference between this and P-GPS mode? Any help appreciated.

It's an orientation control. It is actually used in the P –GPS mode. Basically what it does is allows you to move the  drone according to the controls regardless of which direction the drone is facing. Forward on the sticks will always fly the device away. If you calibrate the IOC while the drone is let's say facing north, then even when you change your nose to face east the drone will still fly north when pushing up on the stick.

Try the simulator, to familiarise yourself.  It is a useful mode, especially when flying at distance and you need to confirm orientation of the aircraft without looking at the app display.  Just means you can keep your eye on the aircraft and reconfirm its orientation then even pop back into the GPS mode.
