Thirdly, As i fly and film the video feed seems to get stuck and jump.  Any idea what causes this and can I correct? Does it affect what is actually being recorded or just what is seen on the screen?

It may just be the connection between your remote and aircraft and the video feed is lagging. The best thing to do is pull the SD card and see what the video looks like there.
