I tried to shoot DLog and was quite dissappointed with the results in terms of clarity and sharpness. I did an experiment. I shoot a short video with different color modes with -1 -3 -3 style. For DLog the blurriness is so bad that such video cannot be sharpen by any tool. D-Cinelike looks bit berter but still far from perfect. Normal is okay but it already has some curves applied thus making the video not suitable for post processing. And at last - Art mode. The edges and definition in this mode look pretty good while the video is still flat and can be post processed. So - to me the best mode is Art. Or am I wrong?

Look at the table edge where it visually meets with the wall

Are you using Android? If so, android I think still doesn't have Art but IOS does.

I use iOS and the latest firmware/software. I am not sure why Art is there. Shouldn't it be?

+1 sharpness? It will be oversharpen, not? Most of sources recommend using -3 -3 -3

No, if you're using IOS, Art profile should be there.

I just checked my versions:
DJI Go 4.0.8 iOS
Mavic firmware is 01.03.0700

I believe both are the latest

As Pugsley suggested I tried to use +1 sharpness and found that D-Log footage is not that smudged. However Art looks just like it looked before.
Is there a good documentation from DJI explaining what sort of processing is switched ON/OFF when we change sharpness/contrast and saturation settings? Otherwise it looks like someone who has a secret knowledge will shoot better than others which is not fair IMO

yes on Android - did not know that there where different profiles for Android and IOS - Have to dust off my old Ipad mini2 and have a look at the ios ver. then.

For your "watercolor" problem just bump sharpening to +1 and its gone its a dji noisereduction  bug if you use any minus value or zero for sharpening...

My experience is that you can't go below 0 on sharpness in DLOG. Yeah, yeah. I know on cinema cameras dialing back sharpness is what you want to do. This ain't one of those cameras. You gotta recognize it's limitations and work with what it gives you. I shoot Dlog at 0, 0, +1 and get solid results, considering the limitations of the camera.
