With my phantom 3 standard, I have tried the 2.7k option and when i record in it and look at the footage afterwords, it is laggy and skips sections of the video. How do i fix this? Thanks!

Are you checking the original videos of the SD card or the video cache of the APP? I would recommend you to check the quality videos in SD card.
I look at the video on the sd card, sorry I didn't make that clear. So any other tips?
What card are you using on the copter? Is it the original card? Try to use a better card for the cam. My be the writing speed of that card is too low for 2k7
I had issues trying to playback 2.7k footage. Thought my phantom was broken.
It was actually my laptop needing better codecs to playback 2.7k.
It's still a bit laggy but it was doing green screen bits so a lot better.
Laptop just not up to playing back 2.7k.
I got the k-lite mega codecs.

This is the link for the SD card I got as a replacement.

What are your computer specs? What software are you using for playback? It may be having problems playing 2.7K video smoothly.
These are the specs, I just recently built this computer:
Processor: AMD FX-8320
Graphics card: ASUS Geforce GTX 1050 Ti 4GB
Motherboard: Gigabyte AM3+ AMD DDR3

If you use the computer's built-in card reader, it may be too slow. Try and use an external in a USB 3 connector instead.
I always pull my pics and vids from the SD card the card you posted should do the job, so as suggested I'm thinking your card reader is the issue
I am using this card below in Both my DJI drones and pulling the info on to a custom Dell X7 gaming computer https://www.amazon.com/gp/produc ... 0?ie=UTF8&psc=1
...the best way to playback and edit the 2k7 footage is,copy the video from the card to the hard drive or internal SSD drive and edit the video from and to there.
