I wonder if it would be possible for the app to have customized "preset" options in the App. I think that would be pretty sweet.

It does!  
The Intelligent Flight Modes have different settings for the gimbal and drone actions, and you can easily adjust these as outlined in this video below.
But the camera also has presets in the main camera settings that have quite a few different presets... have a bit of experimentation!
