Have not (yet) purchased my Mavic Air.

But I wonder... is it possible to make it shoot the 3 HDR exposures for each shot it makes to create the spherical panorama? If so, will it allow me to download all three exposures for each of the 25 positions (shots) of the panorama; for a total of 75 shots per panorama?

This will not work.  Taking just the 25 pics takes considerable time.  However you can add the HDR effect in post.

You can do 3 or 5 AEB shots of the same image and stitch that in post as to create a perfect HDR still as hummingbird said. To be honest, the spherical panos produced by the MA are 32mp and look amazing anyway.
