When i switch back to P mode after using S mode, the gimbal stays in fpv position, and i have to turn the gimbal up manually with the gimbal wheel on the RC.

Is that normal?  

On the spark, in sports mode the gimbal can only be in FPV mode.
I think it’s the same for the mavic air.
If you want the camera to stay level all the time even in sports mode, then get a mavic pro.

Yes it should if you have it set to follow in normal speed mode.
Mine does anyway.
