Just wondering if people use the out of the box features of the M2P to create the video file, or just store the still pictures and process with something like Adobe Premiere or Davinci Resolve, for better stability/correction?

I can't afford Adobe Premiere (subscription is way too expensive) but may consider learning Davinci Resolve, which seems to be free.

So, heres the thing. The problem with using davinci resolve is that the free version wont allow you to edit the raw photos, meaning that any corrections must be done outside of the software. I know that not everyone uses raw, but I felt to point this out. As far as stabilization goes, it is possible, however I have noticed best results when you dont have a whole lot of wind when you shoot the hyperlapse as the software has to work harder to try and recover the footage.
