Is there any way that I can determine after the fact what camera settings were used for a Mavic Air 2 video, e.g., whether it was shot in Normal or HDR mode, and whether the color table was Mormal or D-Cinelike? Is that information somehwere in the lfight log, or embedded in the video file, or indeed anywhere at all?

Yes you can find the cam settings in the jpg or dng exif data
For videos u need the subtitles settings enabled because then subtitle files (.srt) are generated with some basic flight info and also cam settings
