i have the M300, and the sensitivity of the stick is not as smooth as the M210.
maybe one of you guys know how to adjust the sticks (pitch, roll and rotate)

Hi there, for sensitivity, it does not support adjusting the remote control to the aircraft, but only supports adjusting the remote control to the gimbal, kindly please adjust it on the camera setting page. Thanks.

Not sure about M300 controlling app, but most of DJI's apps is offering EXP curvature adjustment. In Go 4 app it's within MC Settings>Advanced Settings. Look for something like Gain & Expo Tuning ...

regarding third party apps - we are patiently waiting for the GS PRO DJI control software to be released which will allow intelligent control of the M300 - great aircraft but DJI was unprepared to limit the system to DJI software only.  

The DJI pilot mission software is very poor
