Will the Phantom 3 function with the Camera Module removed?   The obvious reason would be for a beginner to practice flying without risking damage to the very fragile camera gimble (ive already broken one from landing on a relatively small rock and have bought a parts car), or of course to consider attaching a different camera/ gimble system.

Shouldn't be problem, I have never tried it but think I did see a post where someone did just that. I will look and see if I can find it.

Yes you can fly w/o camera/gimbal. I fly the bird this   http://forum.dji.com/thread-23904-1-1.html   came off (waiting for parts)
You can not however use a different camera/gimbal setup
