Technically, "Ultra High Definition" is actually a sub-set of the 4K digital cinema standard. However, while your local multiplex theatres show images in native 4096 x 2160 4K resolution, the new Ultra HD consumer TV format has a slightly lower resolution of 3840 X 2160.
It appears that currently, in the consumer world, the term 4K and UHD are being trwon about interchangeably. However, you may notice some brands prefer not to use the 4K label at all, sticking with Ultra HD or UHD instead. The 4K shorthand looks likely to stick in general use.
If you are planning to play back your video on any 4K consumer TV or computer monitor, then chances are their native resolution will be UHD (3820x2160). This means that your input (recording) resolultion and output (playback) resolution will be the same and not require any re-sampling or letter boxing for viewing. Recording at UHD will provide the best quality output for current and future consumer TVs. Even playback on a 1080p set will probably look better because UHD is an exact multiple of 1080p sets.
That said, as was pointed out, if you plan to capture stills from your videos, then recording in true 4K will provide better results.
