I noticed that M3C saves hyperlapses as H265 clips, even if my video settings are specifically set to H264.
I went to the camera settings for Hyperlapse and Video, but could not find how to change it.

Well, as a workaround you can save RAW or JPEG frames and then create a final video from those in DR or some other tool, which hopefully provides you with a variety of options. So the most limiting factor really is 2 seconds per frame as the fastest mode.
H265 is better than h264 though, so what's the problem?
You should have a folder of JPG or RAW images to use, which is really what you should be using to create your timelapse. The video it creates is purely for quick reference to check it came out as you planned, in my opinion.

I actually did.
Replaced the innards of my old PC, MB, CPU, HDD -> SSD, tons of RAM....
EXCEPT the videocard, which are super expensive right now, and it's the GPU that is lacking.
The price of the video card I need is x2 of the *entire* upgrade I did for my PC.
I understand my current one would not let me deal with H265 or anything about HD, but since not many people can't even consume UHD or better, I guess I'm ok for now.
When it becomes a real stopper I guess I'll just bite the bullet and get a decent GPU
yup, same here. I did most earlier last year, GPU was the last piece, I waited as long as I could, but a total inability to process M3 media tipped the scales.
So, counting that, M3C cost me almost seven grand US$
