When using a mavic 2 enterprise advanced with RTK, which pixel in the image do the coordinates relate to? Centre? Top left?

No pixel has a direct relationship with these coordinates.  

These are the coordinates of the center of the camera.  

It is necessary to combine position of the center of the camera + camera Heading (true North) + camera pitch.  This is the reason why it is recommended to always make a dataset with images taken at nadir, then to complete if necessary with images that have an angle.  

Compass calibration is also important with single GNSS receiver drones.  With two receivers the true north is more accurate.

Thanks, we are collecting data for a client developing software for PV panels. This is a query from them. We would be using M2EA with emlid base station via local/custom NTRIP.

Is there any documentation with describing what you have mentioned that I can pass to the client?
