Pilot institute has good courses but there is no substitute for experimentation. The learning curve is expensive. The software for mapping subscriptions can be expensive. Start mapping with what you have. Add free products for experimenting like maps made easy, Web ODM, and lower cost programs like litchi and dronelink. This way you could practice without spending $500 per month. Many people buy into subscriptions without customers and they quit. Good Luck. Just knowthe the expensive software will work better.

It's only once a year in summer, but DroneCamp is a great week-long course in Monterey, CA that covers UAS mapping from start to finish, including hardware selection, photogrammetry theory and principles, mission planning, safety and regulations, flight training, data collection and processing, high precision surveys using RTK/PPK GNSS, GIS analysis, etc.
