Is it possible and does anyone know if and how you can increase flight times in Liftoff from 1 minute to a custom time?

What do you mean?
The time in LiftOff is limitless.

Ok, now I know what you are meaning.
Because you are flying in freestyle mode. Use Free flight mode and you won't have any time limit.
Of course freestyle mode is a freestyle race, so you have a limit time.
