I recently purchased Mavic 3 Enterprise.

I am making a program in MobileSDK and I need to test it in the simulator before flying in the real world. The problem is that I'm working in a building with no GPS signal and in that case, the drone thinks its in China (whereas I'm in central Europe) and when I connect the drone to the computer with the simulator (DJI Assitant for Mavic Enterprise) the drone is unable to take off due the the restricted area location. What should I do? There is no reason to create a simulator app, when users can't even fly in it.

Hello,  there. Sorry for the inconvenience. For the location, you may check whether the simulator settings in the DJI Assistant default it to China.
Please enable the “Start Simulating” option in the DJI Assitant and then customize the GPS coordinates to the current location.
