Does the latest version of the DJI app still allow you to change the default altitude setting?

which one? return to home altitude? beginner mode limited altitude? if one of those then id say most likely yes, if something else youll have to be more specific  

Yes it does! I changed mine prior to my first launch. To fly far and above considering I have trees that are sitting on a mountain that are over 275ft tall.
