i have been using my samsung S6 for some time and have not long got an ipad pro.
the image quality on the ipad is realy bad. there is no distortion or flickering / green pink lines. all is good apart from pixilation. the overall quality of the live view is poor compared to my samsung S6.
is there a way of changing the quality in the app of the live image?

Check that 'hardware decoding' is switched on in DJI Go. I have the iPad pro 9.7 and very rarely see any interference on the live image.
Which firmware/software builds are you using (Have a look at 'about' in the 'General Settings' menu) ?
i am not seeing interference i just think the overall quality / detail is not good.
controller / phantom 4 is on latest update. i have been using the new DJI 4 app. the older app was the same.

I the channel select on automatic (it should be by default in UK) ?
It could perhaps just look a bit worse on the iPad Pro hires screen ?
The live video stream from the aircraft is 720P. If your display device is set to cache video, then these files are saved to your device for previewing (720P). The live stream resolution cannot be changed.
The higher quality video is on the SD card.
