There is a change I may be required to keep a flight log book by my insurance company so I'm torn between using something on my iPhone / online VS using a physical book or something I print up.
Is anybody out there using a log book and if so, what are you using and why?

I have built a site where you can upload your existing CSV log files and get both visualization of your tracks and a pilot log.

You could either get a hardware logger, for example Flytrex or you could use a 3rd party app. One of them is DJI Ultimate Flight.

What I don't like? Well, the app only works on my iPad. I wished it worked on my iPhone too

If you fly with FPV Camera (FPV Booster V3), Flight Tracker is probably an easier way to keep track your flight log.

In the flight path, there are two segments that are red colored. I see them in my flight paths too. What does it mean, lost wifi signal?

i use a spreadsheet.  works well for me.
