I'm planning to travel with my drone to various countries. Any idea how to check the legality of the use of drones in each country before getting it confiscated upon entry somewhere?

Each of the various countries will have a civil aviation authority and a list of banned imports.
I would Google each and find out that way.
We can't help more without knowing what countries you are planning to visit.

Also remember to take your invoices with you. Otherwise the customs may make you pay tax if you can't prove country of purchase.

American Airlines has this info posted regarding lithium batteries:

Baggage may contain items that are required to be carried with you onboard the aircraft. For example, spare lithium batteries for portable electronic devices and cigarette lighters must be removed from checked or gate-checked baggage and carried onboard the aircraft.

Any idea about whether they are allowed in St. Kitts?

Just came back from a trip to the UK. They did a swipe test on the body shell and controller. Either testing for explosives or drugs? Had no problems though.

testing it is fine, i would prefer they do so they catch anyone not flying legally.
