I done a custom cut on a Peli case for a Phantom etc. with an electric carving knife.
I would strongly suggest making a template first and playing around with different configurations before cutting.
Is this the Pick and Pluck foam supplied with the Peli cases? If it is, from my experience try and pluck out as much as possible as once you start cutting into the foam between the pre-cut pieces when placing items in and out of the case the little sections just peel off. This happens for example when cutting curves and shaped areas. You can try some super glue to stop the small sections peeling off, but it makes the foam solid / hard where it is applied.
I also seen a You Tube video of a guy who used Plasti-dip spray once finished cutting which supposedly stiffens up and coats the surface of the foam making it more durable, but cant comment on that as never tried it. See link below :
You may also want to think twice about locating the iPad screens above the controllers, especially when closing the lid !! Possibly locate them in the bottom section with foam inbetween for transporting.
Seems like a large case though !! Do you need it that big ??

A space for goggles.
The sunshades for the tablets can fold and so protect when closing the lid.
In case of interference, i can always take TX in hand, only connected with the lightbridge-cable or USB.
I think +/- 2 meter (6feet) will give some mobility around the station.
Also thinking of some kind of stand to put it on while in use. Maybe a alu stand used for electronic keyboards.
