Need to know how low can I fly the Mini Mavic 2 over water. Will the senser induce uncontrolable flying. I heard that it may even fall in the water.

I'd say no lower than 2m, I don't know what the official recommendation is however. I think that lower might have issues that make it fall in the water (e.g. loss of altitude, higher than normal wave)

according to my expirience better keep at least 3 m above the water

Just a reminder that when flying above the water, the vision positioning function will turn off automatically and only the GPS and barometer are used for positioning, if affected by the accuracy range, and an accident might happen.
