how do you make a nice smooth panoramic?  I seems to get jerky movements and can't hold a smooth slow circle

You might want to try the Litchi App.  It has a pretty cool Pano function that you can pre-program at a designated waypoint.  

Adjust the expo settings for your joysticks in the app settings to reduce the sensitivity of the jostick movement.

     Aside from the good suggestion of labroides, you might also want to record your video in 1080p or higher and at well over 30 frames per second.  30, 48, 50 and 60 are good fps settings.  The higher the fps, the smoother the PAN because you are actually going in slow motion.
